Guacamole
Our favorite guacamole is straightforward and simple—we like our avocados to shine. This recipe calls for a lot of lime to cut through the richness of the avocado. We’re team chunky, preferring to have a balance of avocado chunks and smooth avocado mash.
Serves 2-4
Ingredients:
2-3 avocados (about 16 oz)
2 tbsp lime juice
1/4 cup of finely diced onion
Salt to taste (about 1 tsp)
1/4 cup of cilantro
Directions:
- Cut avocados in half and remove the pits. Dice avocados in a crosshatch fashion (about 1/2 inch cubes) and scoop into bowl.
- Squeeze lime directly on avocados and season with salt.
- Add onion and toss avocado chunks, evenly distributing lime, salt, and onion.
- Smash half of the mixture until smooth, leaving the other half with chunks intact.
- Taste guacamole, adjusting lime and salt as desired.
- Add cilantro and toss guacamole until mixture is evenly distributed.
