Our favorite guacamole is straightforward and simple—we like our avocados to shine. This recipe calls for a lot of lime to cut through the richness of the avocado. We’re team chunky, preferring to have a balance of avocado chunks and smooth avocado mash.

Serves 2-4

2-3 avocados (about 16 oz)

2 tbsp lime juice

1/4 cup of finely diced onion

Salt to taste (about 1 tsp)

1/4 cup of cilantro

  1. Cut avocados in half and remove the pits.  Dice avocados in a crosshatch fashion (about 1/2 inch cubes) and scoop into bowl.
  2. Squeeze lime directly on avocados and season with salt.
  3. Add onion and toss avocado chunks, evenly distributing lime, salt, and onion.
  4. Smash half of the mixture until smooth, leaving the other half with chunks intact.
  5. Taste guacamole, adjusting lime and salt as desired.
  6. Add cilantro and toss guacamole until mixture is evenly distributed.
